Brief History of the Berkshire Pig

The first written description of Berkshire pigs occurred during the Cromwellian Period in English history (Oliver Cromwell, “The Great Protector”, 1599-1658). At this time the Berkshire was described as being a reddish or sandy coloured pig, sometimes with spots, and was the breed native to the shire of Berks, it was renowned for its superior meat quality.

Approximately 320 years ago East Asian black pigs were imported into England and crossed with the Berkshire producing the familiar, distinctive black coat with white spots on the feet, tail end, nose and tip of ears. Since this time the Berkshire has remained a pure breed.

The British Royal family have been dedicated Berkshire breeders for generations keeping a herd of pure Berkshires on their Windsor Castle estate. Queen Victoria was a particularly dedicated Berkshire breeder and bred the famous boar “Windsor Castle” who exceeded 1,000lbs mature weight.

 

A Brief History of Kurobuta Production

Not long after the creation of the Black Berkshire a small group of this breed were sent as a gift to the Kingdom of Ryukyu (modern day Okinawa). The Okinawans were so impressed by the quality of the breed that they soon sent some north to Kyushu ( Kyushu is still the centre of Kurobuta production today and is the home to the world famous Kagoshima Kurobuta brand). During the last 2 centuries England made several further gifts of Berkshire breeding stock to Japan and these animals have played an important role in creating the Japanese Kurobuta pigs of today.

Within one hundred years of its arrival in Ryukyu the Japanese had developed a preference for this rich, tender, juicy pork and developed breeding, feeding and management systems to bring out the best meat quality in this “best of the best” pork breed.

Today you do not have to travel to Japan to experience the taste of this pork, Japanese farmers have helped us to learn their methods of breed selection and production allowing Kurobuta to be developed in Australia.

Kurobuta has become the description of a specific type of Berkshire raised using Japanese style nutrition and animal management practises.

The Kurobuta farmer is a patient farmer, not forcing growth on his animals in the modern intensive manner, but allowing them to grow in a slow, natural way that gives a juicy, tender, tasty pork. Kurobuta production is a leader in the trend towards producing food in a gentle more natural way that gives a flavour that makes a meal a pleasurable experience.

 

Berkshire/ Kurobuta Genetics

All Kurobuta pork is Berkshire but not all Berkshire can produce Kurobuta pork.

The Berkshire breed is well documented as having superior meat quality when compared to other commercial pig breeds but Kurobuta pork is one step higher as the “best of the best”.

Japanese scientists have studied the genetic makeup of Berkshire pigs and have developed gene technology that allows the Berkshire breed to be further divided into 4 genetic sub-types: North Island, South Island, Western and Oriental types.

The Oriental type is the basis for successful Kurobuta production. The fat composition is soft, white and flavourful and the meat has a fine, rich texture that is tender and juicy. Many people describe Kurobuta as the Kobe Beef of pork production.

Security Foods identified Oriental type Berkshire in Australia and has worked with farmers to develop an Oriental type Berkshire breeding herd that is fed a Japanese ration type creating Australian Kurobuta Style Pork.
