Merguez originated from the North West of Africa, eventually making its way north. As a result, this fiery lamb sausage has become a staple in France for years. Although containing some chilli, the spice provides warmth rather than burn. Cumin is also added to give it an earthy depth of flavour.
These sausages are made using free range lamb, natural casings and prepared thin so as to avoid overcooking the delicate meat. These sausages are perfect alongside a green salad or served in a crunchy roll with grilled onions and Dijon mustard.
