In Japanese cuisine "kushiyaki " refers to foods that are skewered and grilled. To facilitate even cooking, the meat is cut into uniform shapes and then placed on skewers, careful to avoid overcrowding. 

For these skewers we have used gloriously marbled pieces of Rangers Valley beef taken from the Tri-Tip, part of the rump muscle sitting alongside the rostbiff and rump cap. The rump region is renowned for its incredible texture and flavour. 

Simply season with salt, rub with a little oil and cook over charcoal at a steady consistent heat. Or, in a pan on a high heat ensuring you caramelize the outside.
