Guanciale is an Italian cured meat product prepared from pork jowl. Its name is derived from guancia, the Italian word for 'cheek'. This product is made using Kurobuta Pork - often remarked as being the Wagyu of the pork world.

Rubbed with salt and spices, the cheek is slowly aged for up to 3 months resulting in concentrated flavour within the meat and richness in the fat. This product is perfect for your next Carbonara or Amatriciana. 

* You may notice strands of ubiquitous black hair on the skin of this Pork cut.  Please note this is a natural trait exhibited on this special breed of pork and authenticates that you are eating true, Rare Breed Berkshire Pork. The hair should disappear when charred during the cooking process.
