When cooked quickly this cut will remain beautifully tender and juicy. This cut is perfect for a variety of Asian dishes or a classic beef stroganoff.
To cook the meat, heat oil in the wok until it starts to smoke. Add the meat and other ingredients while constantly stirring. The meat should be fried until all sides are caramelised (which will ensure the centre part of the strips remain pink).
